愈佳次則〔牛角凍〕色如牛角而通明過之牛角凍中易<lb/>有紋如犀角者亦有微黄挂皮如定𡩴之油墜者或<lb/>以高山晶浸油偽水凍然亮而不凍須玩凍字方知<lb/>抉擇產於山洞者曰〔山坑〕為第三品〔半山〕〔高山〕之類<lb/>是已半山多白色偶亦似芙蓉惟芙蓉細膩半山硬<lb/>實不如芙蓉之凝結晃朗耳高山質堅於半山多紅<lb/>白相閒有純紅純白者有藕糕地而紅點者似昌化<lb/>之星星然但不作雞血色有白而晶瑩者名〔高山晶〕<lb/>凡高山皆宜油漬各洞所產有〔肉紅〕有〔美人紅〕如薄<lb/>
